Score the cleaned squid in a crosshatch and cut into bite-sized pieces.

Mix gochujang, gochugaru, soy sauce, sugar and garlic into a sauce.

Heat a wok or wide pan until it is genuinely smoking.

Stir-fry onion, carrot and cabbage 2 minutes over the highest heat.

Add the squid and the sauce and stir-fry no more than 2-3 minutes.

Stir in the cornstarch slurry and toss until the sauce turns glossy and clings.

Finish with green onion and sesame oil off the heat.

Spoon over hot rice and serve immediately.

Did you know — Korean culture
The diagonal crosshatch on Korean squid dishes is a technique with a specific purpose: squid muscle fibres run in one direction, and scoring across them shortens those fibres so the flesh curls attractively and stays tender. The same cut appears across East Asian cooking, and it is a reliable sign the kitchen prepped the squid rather than buying it pre-cut.
Squid has a very short window. Two to three minutes over high heat and it is tender; four and it turns to rubber, and no amount of further cooking brings it back until you are twenty minutes in. Everything else in the pan should be nearly done before the squid joins it.
Scoring is not decorative. The crosshatch lets heat into the flesh fast so it cooks in that short window, and it gives the sauce something to grip - unscored squid sheds sauce straight onto the rice.
A deopbap is a bowl where the topping sits on the rice rather than mixing into it, so the sauce needs body. A small cornstarch slurry at the end takes it from watery to glossy, which is what keeps the rice underneath from turning to mush before you have finished eating.
Troubleshooting
Squid rubbery? Overcooked. It needs 2-3 minutes at most, added after the vegetables.
Pan full of liquid? Squid releases water. The heat must be high enough to drive it off, and the slurry at the end pulls the rest together.
Sauce sliding off? Score the squid properly, and don't skip the cornstarch.
