About Kimchi Bazaar
Most kimchi went in a jar on a counter somewhere, not out of a recipe book. That's the gap Kimchi Bazaar is trying to close.
This isn't a museum of untouchable, do-it-exactly-this-way tradition. It's a working kitchen reference — real technique, explained clearly enough that your first attempt doesn't have to be your worst one. When a step is finicky, we say so. When something's supposed to look weird before it looks right, we tell you that too.
Recipes here get cross-checked against multiple sources and rewritten from scratch, not copy-pasted from wherever ranked first. If something's wrong, tell us — we'd rather fix it than defend it.
